Veg fried rice– a comforting dish featuring fresh vegetables, garlic, and ginger, creating a delightful mix of flavours and textures. Famous in various cuisines worldwide, it can be adapted to suit vegetarian, vegan, or gluten-free diets. Ingredients:

  • 2 cups cooked rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 cup mixed vegetables (carrots, peas, bell peppers, finely diced)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • 2 green onions, sliced
  • Fresh coriander for garnish (optional)


Instructions:

  1. Heat vegetable oil in a large wok or frying pan over medium-high heat.
  2. Add the onion, garlic, and ginger; sauté until the onion is translucent.
  3. Stir in the mixed vegetables and cook for 3-4 minutes until tender-crisp.
  4. Add the cooked rice to the pan, breaking up clumps with a spatula.
  5. Pour the soy sauce and sesame oil, stirring well to ensure everything is evenly coated.
  6. Season with salt and pepper to taste. Stir-fry for another 2-3 minutes.
  7. Toss in the green onions just before removing the pan from heat.
  8. Transfer to a serving dish and garnish with fresh coriander if desired.
