Pork Sekuwa

Sekuwa is a traditional dish of Nepal and a renowned street food loved by many in Eastern Nepal and the capital city of Kathmandu. It is prepared by combining raw meat with aromatic herbs, spices, and other ingredients to complement the fatty pork.

Indulge in the succulent, smoky meat dish with an irresistible texture that will leave you craving more.

  • Preparation time: 1 hour marinated or overnight
  • Cook time- 8 to 10 minutes 

 

Ingredients:

  • 1 lb pork belly
  • 1 tbsp turmeric powder
  • 1 tbsp cumin powder (heap)
  • 1 tbsp chilli powder/paprika
  • 2 tbsp garlic freshly ground
  • 1 tbsp ginger freshly ground
  • 2 tbsp mustard oil or olive oil 
  • 1/2 cup plain yogurt, optional
  • 1 tbsp salt


Instructions:

  • Combine all the ingredients in a bowl. 
  • Give the meat a loving rub until the marinade is evenly distributed.
  • Now, grab a trusty metal or bamboo skewer (if using bamboo, soak it overnight in water to keep things steamy). 
  • Start threading the marinated meat onto the skewer by leaving enough space between each piece.
  • Place those skewers on the fiery stage and let them cook, turning them over every 2-4 minutes to ensure flavour. 
  • Keep grilling until the meat gets a tantalising char on the surface.
  • Cook the pork a little longer if needed for tenderness and juiciness.
  • Serve with fresh lettuce as a wrap, rice, or by itself. And don’t forget the dash of lime!
  • Now, take a bite and let your taste buds revel in the succulent delight.

Pro tip: The longer the marination, the stronger the flavour and the more tender the meat! Ginger is packed with a powerful enzyme called zingiber- a natural meat tenderiser!
