Ingredients:
- 1 package of rice paper wrappers
- 8 oz cooked and shredded chicken or tofu
- 1 carrot, julienned
- 1 cucumber, julienned
- 1 red bell pepper, julienned
- ½ cup bean sprouts
- Fresh herbs (mint, basil, cilantro)
- Rice noodles (optional)
Instructions:
- Boil 75g instant noodles until just right. Drain, rinse under cold water, and set aside.
- Shred cabbage, carrots, bell peppers, French beans, optional mushrooms, and red cabbage are put into strips.
- Sauté spring onion whites until fragrant.
- Stir-fry veggies on high heat until half-cooked but still crunchy.
- Add black pepper, celery (if using), and soy sauce. Mix well.
- Combine the cooked noodles with the veggies, season with a pinch of salt, and chuck in some chopped greens, such as spring onion, coriander, or basil. Let it cool.
- Whip a paste with flour and water – it should be thick and lump-free.
- Place a spring roll wrapper on your work surface. Seal the edges with the paste.
- Fill, roll tightly, and seal the end. Fold and seal the sides inwards.
- Fry the rolls until golden and crispy. Drain on paper towels.
- Garnish with chopped spring onion or cilantro.
